Ingredients

olive oil
30 ml

garlic clove, chopped
1 tsp
thyme leaves, chopped or ½ tsp dried thyme

boneless, skinless chicken breasts
8 slices
white ham

Gruyère or Swiss cheese, thinly sliced

Directions

Step 1
In a small bowl, combine the oil, garlic and thyme.
Step 2
On a work surface, butterfly the chicken breasts, keeping the cutlets intact. To do this, cut each breast in half horizontally without going all the way through to the other side and open like a book.
Step 3
Using a pastry brush, coat the open chicken breasts with half of the oil mixture. Season with salt and pepper.
Step 4
Place 2 slices of ham and 2 slices of cheese on each open chicken breast. Close to seal in the filling. Secure closed with toothpicks. Brush with the remaining oil mixture. Season with salt and pepper.
Step 5
Place the chicken in the basket of an air fryer. Cook for 18 to 20 minutes at 400°F (200°C) or until the chicken is cooked through. Let rest for 5 minutes.
Step 6
On a work surface, slice the chicken. Serve the chicken on plates with asparagus or green salad, if desired.
