mayonnaise

green onions, thinly sliced

celery stalks, cut into small dice

lemon, zest finely grated and juiced

flat-leaf parsley, finely chopped

Directions

Step 1
Place the potatoes in a large pot. Cover with cold water and season with salt. Bring to a boil. Simmer for 15 minutes or until tender. Drain the potatoes and return to the pot. Let cool.
Step 2
In a large bowl, combine the remaining ingredients. Add the potatoes and mix gently to combine. Season with salt and pepper. Cover and refrigerate for 1 hour.
