What could be better than an outdoor potluck-style meal to get together stress-free this summer? This simple and friendly formula is popular any time of year, but can be planned differently if the event takes place outdoors. Here are some tips to make it a fun and memorable event.
1. Assign Dishes
The basics of organizing a potluck, whether indoors or outdoors, are the same. The first step is to divide the types of dishes to be brought (starters, mains, desserts, drinks) among the people invited to avoid doubling up.
2. Bring the Necessary Equipment
This includes the table(s) and folding chairs needed. If necessary, guests can be told to bring their own.
Other Essential Items:
- Reusable or compostable tableware
- Serving and dining utensils
- Tablecloths (with tongs, in case of wind), paper towels, wet wipes
- Lids, plastic wrap or insect netting to protect dishes
- Containers for leftovers
- Sun protection and mosquito repellent
- Lighting, music and games, for ambiance
3. Think About a Plan B
When an outdoor meal is planned, it is best to anticipate the weather. A covered terrace, tent or garage can act as a refuge if rain comes.
4. Use Coolers
Preserving food and maintaining its proper temperature is always important during a potluck, but these precautions become crucial in the summer, when heat can quickly compromise freshness. Coolers are essential and ice packs are also useful as they don’t melt.
… and Ice
– Cubed (and safe to drink): for refreshments and cocktails; also used for drinks that are kept cold in the cooler.
– Crushed : divided into trays to keep perishable dishes such as salads, dips, shrimp cocktails, etc., cool.
Food Security
Unrefrigerated food promotes the proliferation of bacteria and compromises food safety. The recommendation is to not leave perishable foods at room temperature for more than 2 hours. However, this period is reduced to 1 hour if outdoor temperatures exceed 30°C. Once this time has elapsed, or if in doubt, compost.
What to Watch For:
– Cold cuts, seafood, cream or egg dishes that are more sensitive to heat.
– Make sure to place coolers in a shady corner and close them tightly after use.
– Guests are asked to label their dish and mention allergens.
5. BBQ for Hot Dishes
While the oven is an ally of holiday potlucks, the BBQ is by far the most popular way to cook in the summer: burgers, hot dogs, mini-skewers, vegetables, etc. A little reminder here: Have your propane tank filled to avoid being caught off guard on the big P-day.
6. Find Inspiration
Salty
– Summer salad, pasta or legume salad
– Savoury pies (e.g., leeks and cheese, zucchini)
– Bite-cut tortilla rolls or sandwich to share
– Cheese platter
– Raw vegetables and hummus dips
Potato salad is also a potluck classic. It’s available here in a creamy and comforting version, with green onions, celery, mayonnaise, parsley and a touch of hot sauce.
Sweet
– Frozen treats
– Homemade cookies
Seasonal fruit-based desserts are some of the favourites in summer and this classic strawberry pudding recipe lives up to expectations. It is all the more popular because it can be cooked either in the oven or on the barbecue, in an aluminum tray.
