Ingredients
- Fried Chicken
- 1 lb
- boneless, skinless chicken thighs (about 4 or 5 thighs) or boneless, skinless chicken breast, halved horizontally

- cornflake cereal, crumbled

Directions
- Step 1
- Fried Chicken
In a bowl, combine the chicken, lemon juice, onion powder, garlic powder, salt and cayenne. Mix well. Let marinate for 5 minutes (see note).

- Meanwhile, in a shallow dish, place the flour. In a second shallow dish, lightly beat the eggs. In a third shallow dish, combine the cereal and oil.
- Step 3
- Working one piece at a time, dredge the chicken in the flour, shaking off any excess. Dip into the beaten eggs, letting some of the excess drip off. Press lightly into the cereal mixture to coat well.
- Step 4
- Place the chicken in the basket of an air fryer, evenly spaced out. Cook for 15 minutes at 375°F (190°C). Flip the chicken over and continue to cook for 5 to 10 minutes or until cooked through and nicely browned. Season with salt.
- Step 5
- Herbed Mayonnaise
Meanwhile, in a bowl, combine all of the ingredients.

- Serve the chicken with the herbed mayonnaise.
Tips
The chicken becomes tender and flavourful in just a few minutes of marinating in the lemon juice and salt before proceeding with the breading.
