Ingredients

1 tbsp
brown sugar
2 tsp
smoked paprika
½ tsp
onion powder
½ tsp
garlic powder

whole chicken legs or 12 drumsticks with skin
1 lb
Nantes carrots, halved lengthwise
450 g
1 tbsp
maple syrup
15 ml
1 tbsp
thyme leaves, finely chopped or 1 tsp dried thyme
1 tbsp
olive oil
15 ml

Directions

Step 1
With the rack in the middle position, preheat the oven to 400°F (200°C). Line a baking sheet with a silicone mat or parchment paper.
Step 2
In a small bowl, combine the brown sugar and spices.
Step 3
On a plate, coat the chicken with the spice mixture. Season with salt and pepper. Place the chicken around the edges of the baking sheet. Bake for 10 minutes.
Step 4
Meanwhile, in a large bowl, combine the remaining ingredients. Season with salt and pepper.
Step 5
Remove the baking sheet from the oven. Spread the carrots out in the centre of the baking sheet. Bake the carrots and chicken for 40 minutes or until the chicken is cooked through and the carrots are tender.
Step 6
Serve the chicken and carrots on plates with potatoes or green salad, if desired.
